Cookie Love

In our house, snack time is serious business. With a 7 year old who is way too busy to slow down for more than a nibble or two of his crustless ham and cheese, and a toddler who thinks grazing is better left to sheep, I'm constantly trying to sneak nutritious treats into their Green Eats Snack Bowls. We have our favorite quick bites, the standard grapes, apples, carrot sticks, cheddar cheese, but these snacks don't really cut it for the after school set.

Instead, I rely on a recipe for Chocolate Chip Cookies that my boys love. The ingredients made me very skeptical and hopeful. If I could infuse cookies with extra protein, load them full of chocolate chips, and have the kids inhale them? A huge win for mom, but who on earth eats cookies made from chickpeas. I mean, really? We do! 

RECIPE:

15 oz Can of Chickpeas, rinsed and dried
1 tsp Vanilla
2/3 Cup Natural Peanut Butter (the peanut-only kind)
1/4 Cup Sugar
2 Tbsp Honey or Maple Syrup
1 tsp Baking Powder

1/2 Cup Chocolate Chips

Preheat oven to 350* F. Blend all ingredients but the chocolate chips in a food processor until smooth. You might have to scrape the sides down once or twice and offer up a prayer that your food processor doesn't die like mine did in the mid-cookie whirl. After you've processed those little beans into submission, stir in the chocolate chips. Use wet hands to form your cookies and press them onto a greased cookie sheet to flatten a little. Bake for 15-17 minutes. I typically get about 2 dozen 1.5 - 2 inch cookies out of this recipe. 

This is one cookie recipe you have to try to believe. Once they're out of the oven, I like to pop a pile of them onto 
the boys' favorite Green Eats Snack Plates. The plates are nice and thick, so they can handle the molten chips and the heat of the fresh baked cookies, small enough for little hands and to make a modest stack of cookies seem like a King's Feast, and they come in fun colors that the kids really love.
